Here is another Dumping Dinner recipe that is so easy.

I really needed it yesterday. We had lunch plans after which we were meeting my youngest daughter, Elena, and her husband to look at a model home they are interested in. On top of that, we had a few errands and a grocery pickup.

Have you tried grocery pickup? It’s wonderful. I was a little resistant in the beginning, but I have found I love having someone pick out the best stuff and load it in my car. They are a little bit better at it than I am and it saves me a lot of time that used to be spent wandering around the store looking for what I need. It’s just the thing when you have an already pretty full life.

For our dinner, I used the slimmed down version of this dish which only includes three ingredients. But you may want to add some extra seasonings like cumin, chipotle chili, or oregano added to spice things up. You can also use boneless, skinless chicken breasts or thighs. It’s up to you, your taste preference, and what’s in your pantry.

Salsa Pork with Beans


1.5-2 pound pork roast or tenderloin
1 jar salsa, your choice
3 15-ounce cans undrained pinto beans


Place roast in crock pot. Pour salsa in, covering roast. Cook on low for 10 hours or on high for 4 hours.
When meat is cooked, shred it up. Add beans. Give it a stir and allow beans to heat up a bit.
Serve with your favorite toppings. We use sour cream, shredded cheese, tortilla strips, and sliced green onions.

Weight Watchers SP: Approximately 3 for 1 1/2 cups depending on your cut of pork. If you use chicken breast, the dish is 0 SP. Toppings are extra.
