This recipe is an all-time kid-favorite, made with plenty of whole wheat, healthy ingredients.


1 large egg
¾ cup packaged light brown
1 cup mashed ripe bananas
13 cup yogurt
13 cup vegetable oil
1 tsp vanilla extract

1-½ cup whole wheat pastry flour
½ cup oat bran or unprocessed wheat bran
2 tsp baking powder
½ tsp baking soda
1 tsp ground cinnamon
¼ tsp salt
1 cup semi-sweet chocolate chips


Beat eggs and sugar together.  Add bananas, yogurt, vegetable oil, and vanilla.  Set aside.

Mix flour, bran, baking powder, cinnamon, and salt.

With a spatula, fold in banana mixture with flour mixture, until lightly blended (don’t overmix).

Scoop batter into greased muffin tins (an ice cream scoop works well for this), filling tins just to the top of the muffin tin.

Bake in a preheated 375º oven for about 15 to 25 minutes, until a knife inserted in the center of a muffin comes out clean. Cool for 10 minutes.  Remove muffins from tin.
